To disable the rescue options use GRUB_DISABLE_LINUX_RECOVERY=true
in /etc/default/grub and run sudo update-grub
To get rid of the other Kernel versions you have to remove them via
apt-get/aptitude/synaptic or whatever else Ubuntu uses as their default
GUI for apt.
