Here are some entries from my menu.lst regarding colors,

    # Set default colors - menu-item(fg/bg)  selected-menu-item(fg/bg)
    color    light-gray/blue  black/light-gray

    # Change color scheme.
    # Entry 14:    Alternate Menu Colors
    title   Alternate menu colors to Light-Gray/Red Black/Light-Gray/
    color    light-gray/red  black/light-gray

    # Entry 15:    Alternate Menu Colors
    title   Alternate menu colors to Light-Gray/Cyan Black/Light-Gray/
    color    light-gray/cyan  black/light-gray

    # Entry 16:    B&W Menu Colors
    title   B&W menu colors to Light-Gray/Black Black/Light-Gray/
    color    light-gray/black  black/light-gray

    # Entry 17:    Default Menu Colors
    title   Default menu colors to Light-Gray/Blue Black/Light-Gray
    color    light-gray/blue  black/light-gray
