I think your monitor displays 800 x 600 ?
And you use Windows?

Once gnubg runs, you see (as every other window under Windows):
- [] x
at the top right.

Click on [] to maximize the window.
(or double click on the top bar)
(or click on the icon top left and choose 'maximize')

And, to get a maximized board:
(menu of gnubg)
Windows / Full screen

(hit Escape to return to the 'normal' view)
