Btw:
Steel is an iron-carbon-alloy with up to 2% carbon.
Hardening (German: Härten) is the process of transforming the homogeneous structure of steel to an Martensitic structure which is very strong and brittle. This is done by heating the steel to the Austenitic temperature and quenching it in oil, water or any other media (which cools down the steel faster than its critical cooling rate).

Look at the short description of the Boltzman machine, which gives a
quick overview of annealing in this context.

From this I'd translate it to "annähern" (annealing rate = Annäherungsgeschwindigkeit oder -kurve) which is converge/approach in English.
