By default (that is by using doc-view) Emacs converts PDF files to
images, and thereby looses all meta-data that a real Pdf viewer can make
use of. That's why the default keybidnings for resizing are the same as
in image-mode ('+' to enlarge, '-' to shrink).
If you're not ok with this, there is a project named "pdf-tools" that
aims to fix these issues, which you might be interested in.
