bug#18320: 24.4.50; minor typo in `query-replace` doc string

"Bindings" should not be quoted here, any more than should
"customize", "responses", etc.  We are *using* the word here; we
are not just *mentioning* it.

  To customize possible responses, change the "bindings" in
  `query-replace-map'.
