Setting `ispell-local-dictionary' from the ~/.emacs file should do the job
I have something like
(setq ispell-local-dictionary "castellano8")
Same for desired `ispell-program-name'.
Both `ispell-local-dictionary' and `ispell-program-name' are already
customizable.
