Castling is a king move, so try moving the king two squares.

You can't castle if either king or rook has moved previously
even if returned to their original square, nor can you castle
out of check through check (i.e. if the King's Bishop square is
threatened when castling king side) or into check.

I haven't tried the Apple user interface, but I have received
reports of being allowed to castle illegaly - after a king or
rook has returned to it's original square.

GNU Chess is just the "brain" component, it doesn't provide any
pretty interface, unless you like ASCII text, so all that is
down to Apple AFAIK.
