What do you get from this:
$ file demo.elf
demo.elf: ELF 32-bit LSB executable, version 1 (SYSV), statically

$ file demo.elf

What happens if you just go into doc/examples/demo and type this?
$ make clean; make

Do you have avr-binutils and avr-gcc installed properly?
$avr-gcc -v
