With the hint I wanted to tell you that the format specifier is
described in the doc string of `font-latex-user-keywords-classes', not
that you should customize it. Oh well.
And you shouldn't use quotation marks for the format specifiers in the
customization dialog. I'm surprised that this works at all.

In my case it works with `font-latex-match-bold-command-keywords' as
well. At least with the CVS version of AUCTeX. I haven't tried it with
your version.
