It determines how "zoomable" images are. 
For subpixel=1, one image pixel corresponds to one screen pixel, so
images will get "blocky" when zooming in. 
At e.g. subpixel=2, one screen pixel corresponds to 2x2=4 image 
pixels, so you can zoom 200% without loosing image quality.
Of course, the images have to be present in the PDF at this 
resolution in the first place. subpixel only determines to what degree
images are downscaled. Without subpixel, images are kept
at their original resolution (= highest quality, largest
file size).
