Sure, this can be a problem.  But then in the common case I suspect you
want your flash to be non-zero at startup?

In what sense?  Are there other kinds of flash than just NOR and NAND?
(By the way, NOR would be if=pflash; mtd is NAND.  I just picked a
random one).
