I think pan takes the first one profile setup as the default.  You can of 
course change the defaults for individual groups, but to change it for 
groups you've not setup specifically, I think the easiest way would be to 
edit the profiles.xml file in the pan data dir (~/.pan2 by default), 
putting a different profile first.  With pan closed, of course.
