Follow-up Comment #1:

This URL https://www.gnu.org/software/octave/img/screenshot.png is an
.htaccess rule, thus we can let it point whatever we want to.

If you agree, I update the current screenshot with the 1600x900 version
attached and write a comment inside .htaccess to stick to this image
resolution for each upcoming update.

Do you only need the URL for the AppStream standard or the file itself?

I attached the plain GIMP .xcf file if you want to do modifications yourself.
