Follow-up Comment #1:
This works fine for me. The 'tex' interpreter is only available when using
the gnuplot toolkit. Was that set on your system? Also, the demonstration
code you had did not have the backslash '\' escape character necessary to
trigger the interpreter.
Sample code that I used:
graphics_toolkit gnuplot
text (0.5, 0.5, '\alpha \beta \gamma')
