Follow-up Comment #1:
Octave used gnuplot for all graphical output.
When displaying the gnuplot "terminal" is set to "aqua", "x11", etc.
For bitmap output the terminal is set to "png", "jpg", "gif", etc.
For vector output the terminal is set to "postscript", "pdf", "tikz", etc.
Gnuplot has a driver for each terminal which does not rely upon the others.
Thus, what you're looking to do is not consistent with how gnuplot works.
As a work around, I recommend using the MacOS X CMD+shift+4 key combination
to take a snap shot of the image. That will preserve the nice anti-aliasing
properties of the aqua terminal.
There has been some discussion about providing the functionality you're
looking for in a future release of Octave. However, so far no one has proposed
a patch.
