Here is the answer to your questions:

1) I am using TCP API.

2) I didn't change MEMP_NUM_TCP_SEG  since you didn't think it was the problem anyway.

3) Changing #define MEMP_NUM_NETBUF 3 to #define MEMP_NUM_NETBUF 30 did not help.

4) Sorry, but I don't know how to use LWIP_STATS:

In lwipopts.h, I already have #define LWIP_STATS 1, I added stats_display() to my code, but it displays nothing.
I read into stats.c, first, I am not sure which one is more critical to monitor (I assume it is the memory?). Secondly, say I wish to monitor memory since we suspect memory resource, I assume I should use stats_display_mem, but I have no clue what to complete the call so that I can do it.

Any pointer on how to proceed?

Your buffer size and TCP_SND_QUEUELEN look fine. 

Which API are you using? If netconn or sockets API then this is probably
limiting you:

#define MEMP_NUM_NETBUF         3

You also have a relatively small value for this (although clearly this
isn't your current limiting factor):

/* MEMP_NUM_TCP_SEG: the number of simultaneously queued TCP segments.
*/
#define MEMP_NUM_TCP_SEG        9


I would suggest using the LWIP_STATS code to see which resources are
reaching their maximum, and adjusting appropriately.
