Hi Peter,
Lime is available on desktop application(just run configure with the --enable-lime, and set lime=1 in the sip section of .linphonerc). For IOS it shall work but you'll have to tweak the build(it may be done one of these day).

If a lime enabled client try to send a message to a non lime-enabled one, the message won't be displayed and the sender will be notified that the message couldn't be delivered.

The lime enabled client can receive plain message.

There is no options to disable lime during runtime and allow a plain text message sending which may be useful.
