but unfortunately its says further down

This is because \arpeggioParenthesis assumes you are inside just one
Voice, and so is ineffective for PianoStaff and even just Staff.
So you must do what it does, but for Staff, e.g.

\consists "Span_arpeggio_engraver"
}
\relative c' {
\set Staff.connectArpeggios = ##t
\once \override Staff.Arpeggio.stencil = #ly:arpeggio::brew-chord-slur
\once \override Staff.Arpeggio.X-extent = #ly:grob::stencil-width
