Well, the source code is public: 
<http://git.savannah.gnu.org/gitweb/?p=lilypond.git;a=tree;hb=HEAD>.
The algorithms you’d be looking for are written in C++, contained in the 
lily/ folder.  I don’t think there’s an easier way to understanding than 
reading the source code.
