Why not leave the engravers there and just set everything you don't want 
to transparent:

    \override NoteHead #'transparent = ##t
    \override Stem #'transparent = ##t
    \override Dots #'transparent = ##t
    \override Accidental #'transparent = ##t
    \override NoteHead #'no-ledgers = ##t
