You can also override the minimum size of a staff vertically, by adding the
following to your score block:

\context { 
        \Staff 
                \override VerticalAxisGroup #'minimum-Y-extent = #'(-6 . 6)
}

The default for a Staff is, I think, (-4 . 4), so test with different
values.
