All this, and a lot more, is described in the LilyPond Tutorial.
As you already have noticed, LilyPond is very different compared to
most other programs you have seen earlier. One of these differences
is that you shouldn't expect to be able to do anything useful without
reading the Tutorial, so please go to www.lilypond.org, click on
Documentation for the version of LilyPond that you installed and
then follow the links to the Tutorial.
