newbie problem with percussion

I'm only new to Lilypond, so this is probably just my own lack of knowledge that's causing me grief, but I simply cannot get any percussion other than standard drum kit to sound in midi files generated by Lilypond. I'm trying to score some Salsa pieces, and want to include congas and timbales, but when I play the midi file, they simply aren't there.

I noticed that the sample file drums.ly included timbales, so I ran it to midi - no timbales, just the standard kit. The timbales do appear on the score, but do not sound in the midi file. I then doubled the length of the timbales section, so it would continue past the drum kit, just in case the timbales were not being heard over the kit - still no timbales, and what's more, the midi file stopped right at the end of the kit line - there was not even a silence where the timbales were meant to be.

Have I missed a setting somewhere? Or is the problem something outside of Lilypond? I'm running version 2.2.2 on Mac OS X (which actually means I'm running KDE under Apple's X11 - maybe that's part of the problem?).

TIA

Brett
