Ofcourse its possible to use another music-font in general, but yes, for
the cross-style noteheads always Emmentaler would be used.
I thought it's better than nothing.

If we have the meanings to spit out a warning when the character is
not in the
font, shouldn't we be able to selectively fall back to Emmentaler for
symbols
not in the current font?

Well, currently I don't know how to check whether a relevant
notehead-glyph is in the font or not.
I'll have to investigate.

Though, tomorrow I'll be in hospital for some surgery, don't know
exactly when I can proceed. Will set this issue to needs-work.

Another thought, why take a notehead-glyph for the cross-style
TabNoteHead at all? Wouldn't it be sufficient to take the "x"-character
from the present font for it?
