You should checkout the 2_0 branch to begin with, doing:

    cvs -z3 -d:ext:address@hidden:/cvsroot/lilypond co -r lilypond_2_0 -d 
lilypond-2.0 lilypond

Then, you can simply do:

    cd lilypond-2.0
    cvs update

You cannot mix cvs HEAD development (2.1.x) with another branch.  If
you say:

     cvs status ChangeLog

it tells you from what branch you're pulling.
