I've done "make test" a few times in the past year, always with out-of-tree builds, and it was always fine. I agree that it would be nicer if $LILYPOND_BUILD_DIR could be changed at will, but as long as people don't break GUB and it's easy to get your build tree back to the "default" state (i.e. delete it), I'm not too fussed about fancier stuff.
