I am not using fancy mail, but nnmail-split-method understand
 regexp. So if I want all the mail from @chello.at going to chello
 and all the mail coming from @xyz.au going to xyz I put in my
 .gnus file:
(setq nnmail-split-methods
    '(("chello" "^From:.*chello.at")
      ("xyz" "^From:.*xyz.au")))
I got that from:

in the sorting incoming mail section.
