Set colorbar scale manually?

Hello all,

I have some temperature plots that I'm making for a paper, and I'd like to
manually set the scale of the colorbar.  Googling around, I can't figure out
how to do this.  Please see the attached image.

I'd like to set the darkest blue to <=-.5, and set the darkest red to >=3.

How do I do this?  Again, I've searched, but its possible that I'm not aware
of the correct terms to search for.
