Have you tried this with GNU Emacs launched with -Q? You can make all your doc-view related changes active from/in *scratch* buffer, or you put them in a little ELisp file and you load it with -l.
PPC, Tiger, Mac OS X 10.4.11 – doc-view-resolution is 100 (I have ``Xft.dpi: 100´´ in ~/.Xdefaults), doc-view-enlarge (+) works fine. Do you have enough disk space? The PNG files are put into /tmp. Which version is your Ghostscript?
