Try html2text-substitute (controlled by html2text-replace-list) or
xml-substitute-special (controlled by xml-entity-alist).
Also, am interested in a function to do reverse.
Try url-insert-entities-in-string or xml-parse-region (also controlled
by xml-entity-list).
