turning off all bindings and exiting out of option you started

I wrote lots of my own bindings in Emacs but sometimes
I accidentally start up some existing function I don't
want to use.  Is there a way to just turn off everything
I didn't define explicitly to avoid this happening???
If you have a better suggestion I'm open to hearing it.

Related to this,  what is the best fool-proof way to
get out of a command you accidentally fired off???

e.g. Does "keyboard-quit" exit everything?
