I'm not an elisp programmer, but I think it's just 'insert'
For example:
(defun insert-date ()
"Insert date at the current cursor position in the current buffer."
(interactive)
(insert (format-time-string "%d %B %Y ")))
> From: Denny =?ISO-8859-1?Q?L=F6fgren?= <address@hidden>
