I've written a patch to make this work:

 (bootloader
   (bootloader-configuration
     (bootloader grub-bootloader)
     (target
       "/dev/disk/by-id/ata-QEMU_HARDDISK_QM00001")
     …

…now to rewrite so it stands a chance of being merged :-)
