This occurs because \vdash is not defined in org-entities, while the
other symbols are. If you want it to export properly to LaTeX, you can
add something like the following to your ~/.emacs:
(add-to-list 'org-entities-user '("vdash" "\\vdash" t "⊢" "|-" nil "⊢"))
For more information, type
C-h v org-entities
C-h v org-entities-user
