99.999% of my use of*scratch*  and the minibuffer is code or data
that should be (i.e., that I want to be) monospace.

That's fine, and I wasn't suggesting changing that.

No, just that the initial contents shouldn't be monospace.

What's so hard about using a variable-width font for your Emacs classes/demos

I generally don't do demos. My students use Emacs directly, and it's better for them (as for any other new user) if the defaults work nicely for them.
(FWIW, on MS Windows it looks like menus use a variable-width
font.)

Same is true for GNU/Linux, by default.
