I have the following code to do exactly that in my .emacs although I can't quite
remember where I found it:
(dolist (hook '(erc-mode-hook
LaTeX-mode-hook
edit-server-start-hook
markdown-mode-hook
twittering-mode
text-mode
fundamental-mode))
(add-hook hook (lambda () (variable-pitch-mode t))))
