Follow-up Comment #1:

This is a problem with the differences in how keyboards are labelled and the
names assigned to the different key combinations. Denemo uses GTK to name the
keys without doing any translation to the locale, so the names refer to (I
think) a US keyboard. On that keyboard the key next to the backspace key has
an "=" with a "+" above it. The first of these is named "equal" the second
"Shift+equal" and they do the commands
Sharpen Next Note 
and
Sharpen, 
respectively. (In addition there is a key named "Add" on the numeric keypad
which does Sharpen and "Shift+Add" shifts the enharmonic set sharp-wise,
"Ctrl-Add" zooms the display.)

The main point, however, is these are just initial settings, Denemo is unusual
in that you can change the key assignments at a single keystroke. You
highlight the command and press the key and it changes the key shortcut for
that command.
The Help menu has a command listing the short cuts you have set.
