I don't recognize the "7" you refer to - it seems more like a Jellyfish setting.
When playing human v. computer and using manual dice, the computer displays the dice-selection window automatically. Are you sure it isn't behind the main window?
Try going to the Game menu and selecting Play Computer Turn.Have you read the tutorials http://www.bkgm.com/gnu/AllAboutGNU.html and http://www.gammonlife.com/gnu/index.htm ?
