Good question! I aware of the fact that texinfo is the official gnu
documentation format. The choice of LaTeX therefore gave me a bit of bad tase
in my mouth.

However....
I usually get a bit upset by texinfo. I often find limitations and I usually
have to type a lot of macros to make thing look fine in all formats, and I'm
often finding myself making a compromise and therfore not focusing on the
content. I'm not using any advanced features of LaTeX, and I think it will be
quite simple to convert it back to texinfo.
