You don't have to. See below.

IIUC you can start the git checkout emacs binary and the local
installation with:
$ /path/to/git/checkout/src/emacs --daemon=git
$ emacs --daemon=local
and use `emacsclient -s git' or `emacsclient -s local' to connect to the
daemon you want to use.
