TextEdit is a plain text editor, isn't it?  Did you try opening the pdf
with some pdf viewer?  Maybe you just associated pdf files with
TextEdit, and of course viewing the raw pdf contents with an editor
looks kinda like garbage.

Could you provide a sample garbage pdf and the latex source it was
compiled from?
