Yes, when you do a cvs 'diff' (I usually use 'cvs -z9 -q diff -u'),
you see the modifications explicitly.  If you do a 'cvs update', no
files that you've modified from the repository will be overwritten,
but they will be listed with a 'M' flag for 'modified'.  Any files
present not in the repository appear with a '?' flag, and any files in
the repository which you've deleted result in a warning message.  the
last two categories appear identically in a cvs diff too.
