So you likely learned two things: First, I don't own a Mac and second,
an easy remedy for your problem is not to use the Carbon framework.

As you failed to provide any further information, e.g. what happens in
your case if you start XEmacs with the -vanilla option and what
happens if you call `LaTeX-install-toolbar' in an instance started
with -vanilla, I can only give you the advice to fire up a debugger
and step through `carbon_output_frame_toolbars' in toolbar-carbon.c
and try to find out yourself what the culprit could be.
