Experimenting with

(progn
  (defun foo ()
    (interactive)
    (self-insert-command 1)
    (message "Rhabarber"))
  (global-set-key "\\" 'foo)
  (switch-to-buffer (get-buffer-create "*temp*"))
  (set-input-method "TeX"))

didn't show any negative effects.  I'll check what happens if
`TeX-mode-map' is used instead of the global keymap.
